No, you cannot use 's'intéresser à' here, as the English says -

I'm sure my wife would be interested to discover your creations = Je suis sûr que ma femme serait intéressée de découvrir vos créations 

or 

....ça intéresserait ma femme de découvrir vos créations.

It is a bit like saying :

I am sure my wife would be willing to discover your creations.

But if you said -

My femme s'intéresse beaucoup à vos créations

it means a totally different thing, that she is passionate, enthusiastic about your creations
