I cannot quite figure out why the verb 'remplir' is in the form 'remplis'. Is it because 'remplis' is used as an adjective?

Hi Andrea,

Just as in the English, the sentence -

les calendriers qui sont remplis de ...= calendars which are filled with ...

is in the passive voice which uses the verb 'être' and the past participle of the verb 'remplir'.

Yes, ‘remplis’ is the past participle of ‘remplir’ as adjective. 

The verb is ‘être’ in the present tense with the adjective ‘remplis’ in the masculine plural form to agree with the subject - “ les calendriers … qui sont remplis …. “. (The calendars are filled …)

The construct ‘sont remplissent …’ is not grammatically correct, and doesn’t make sense in French.
